Simply Asia Noodle, Sauce & Topping Mix and Quick Thai Recipe

Enjoy this super fast Thai noodle dish whenever you’re starving and need to make a quick meal from the pantry and the freezer. I find the Simply Asia box mix to be convenient to keep in the pantry for an emergency and just stir fry whatever I can find canned or in the refrigerator to add to it at the last minute. Here's how to make stir fry faster using the mix...












 
Quick Thai Shrimp & Corn Noodle Stir Fry Recipe

Ingredients:

1 Box Simply Asia, Noodles with Peanut Sauce & Roasted Peanut Topping
Or, a 2” diameter bundle of Asian wheat noodles, ½ C peanut stir fry sauce and 2 T chopped peanuts
1 8oz can Baby Corn, drained
2 C pre-cooked small Shrimp, thawed
½ C Green onion, green part cut into ½ lengths
½ C Celery stalks, cut on the bias into bite-sized lengths
1 t salt
Salt & pepper to taste

Directions:

In a large pot, bring 8 cups of water to boil. Once boiling, add 1 teaspoon salt and noodles and stir. Boil for 5-7 minutes or until tender. Drain, rinse, and drain again. Once the noodles are out of the large pot, add the stir fry sauce and baby corn, and cook over medium heat about 2 minutes. Add the shrimp, noodles, celery, and green onions to the pot. Stir, and cook just until warm and evenly coated with sauce. Plate and garnish with chopped peanuts. Serves 4 as a side dish, or, 2-3 as a main dish.

Note: Asian style noodles look like skinny off-white flat sticks when uncooked. They are almost half the length of spaghetti noodles, and can easily be replaced by thick or regular spaghetti in a pinch. Just break them in half before you put them in water to cook. Another difference, the Asian style noodles cook up really thick once cooked; much more than Italian pasta. They are both made from wheat, but the Asian noodles cook nearly twice as fast. Great in a hurry.





If you’re not buying the Simply Asia box mix, for the chopped peanut topping, be sure to use Planters lightly salted dry roasted peanuts because they have half of the salt that the regular kind do. An ounce of these only has 2 grams of saturated fat.
