Grilled Chicken, Pineapple &
Coconut Rice















 If you feel like doing some grilling (or learning the Hula) they way they do in Hawaii, just use this wonderful marinade for skinless chicken breasts to make it ultra delicious! I keep buying this wonderful marinade over and over, because the flavor is so reminiscent of the Hawaiian Islands, and a Luau with Hula Dancers.

Pineapple Teriyaki
Marinade and grilling

…the sweet tangy flavors of the islands from the pineapple, ginger and lemon juice. I love the thickness of the sauce and the abundant sesame seeds. I usually reserve some of the marinade mix (straight from the bottle) to drizzle over the chicken before serving. Although it’s not shown in the picture, because after waiting for it to grill, I was hungry out of my mind…it’s that good. In the mood for a Luau, and since I was grilling anyway, I added some canned chunk pineapple to the grill until it was lightly browned, and also cooked some coconut jasmine rice to complete the meal. So…good!

While I’m thinking about Polynesian Food and culture, here’s a great resource for fun things to do in Hawaii and a link to Hawaiian Luaus on Kona, “the big island”. A Luau is another fun and festive place to watch the hula and learn about Hawaiian and Polynesian culture. Many of the hotels give free lessons. Its for men and women, not just the extroverts. Drink a “Blue Hawaii” cocktail if you have to, for the courage to learn the art of storytelling through dance.
